Ingredients
• 4 eggs, lightly beaten
• ¾ cup milk
• ¼ cup caster sugar
• ⅓ cup smooth peanut butter
• 8 slices white bread
• 2 small ripe bananas, peeled, sliced
• 25g unsalted butter
• 2 tsps vegetable oil
• Honey and sliced strawberries, to serve

Combine eggs, milk and sugar in a large bowl. Whisk well. Pour into a large shallow dish.

Spread peanut butter evenly over one-side of four bread slices. Top with banana, then remaining bread.

Place one sandwich into egg mixture. Stand for 30 seconds. Turn and repeat until well soaked. Drain off excess.Transfer to a tray. Repeat with the remaining sandwiches.

Melt half the butter and oil in a large, non-stick frying pan over a medium heat until butter starts to foam. Add two sandwiches. Cook for about 2 minutes on each side, or until golden brown. Remove.

Wipe pan clean. Repeat the process with the remaining butter, oil and sandwiches.

Serve with honey and strawberries.
